White Chocolate Peppermint Cookie

White Chocolate & Peppermint Cookies

This recipe is my gift to you. Happy holidays!

{They are probably the best cookies i've ever made. Ever.}


  • 1/3 cup of palm oil shortening
  • 1/3 cup brown sugar
  • 1 tsp. vanilla
  • 1/2 tsp. peppermint extract
  • 1 large egg
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1.5 cups almond flour
  • 3/4 cup white chocolate chips
  • 3 candy canes - crushed into powder

How To:

Oven @350 + lightly greased cookie sheet standing by.

Cream together the shortening & brown sugar using an electric mixer. Once well combined add your vanilla, peppermint & egg. Mix well.

Combine all dry ingredients together in a bowl. (excluding white chocolate chips.)

Introduce the dry to the wet. Mix until your dough comes together. Stir in the white chocolate chips.

1 heaping tbsp. = 1 cookie. This recipe makes 12.

space them out on your cookie sheet & press into a flat, round shape. bake for 10-12 minutes on a middle rack in the oven.

Dust the top of the cookies with crushed candy cane right when they come out of the oven. Let them rest for 5 minutes before serving.
