Simplicity has been my #korKitchen theme this summer & there is truly nothing better than a sliced tomato with salt, pepper & a drizzle of olive oil.
But why should we be eating these big beautiful tomatoes?
1. Healthy Skin
Beta-carotene, an antioxidant found in tomatoes, helps protect skin against sun damage. Tomatoes’ lycopene also makes skin less sensitive to UV light damage, a leading cause of fine lines and wrinkles.
2. Blood Sugar
Tomatoes are a very good source of chromium, which helps to regulate blood sugar.
Vitamin A found in tomatoes can actually improve vision and help prevent night blindness. Recent research shows that eating tomatoes may reduce the risk of macular degeneration.
4. Chronic Pain
Tomatoes are high in bioflavonoids and carotenoids, which are known to be anti-inflammatory. Chronic pain usually involves chronic inflammation, so attacking the inflammation is a good way to fight the chronic pain.
5. Strong Bones
The vitamin K and calcium in tomatoes are very good at strengthening and repairing bones. Lycopene has also been shown to improve bone mass, which is an awesome way to fight osteoporosis.
Eating plenty of fruits and vegetables, especially in their prime season, will offer protection against high blood pressure, high cholesterol, strokes, and heart disease.
