Kohlrabi & Granny Smith Salad

I'm not lying when I say that this is my favorite salad ever.

Sure i've said it about other korKitchen salads in the past...but this time I'm 100% for real. Fall flavors for the win!


  • 1 lb kohlrabi, sliced into large matchsticks
  • 1 Granny Smith apple, sliced into large matchsticks
  • 1 tbsp. lemon juice

Apple Cider Vinaigrette:

  • 1/4 cup apple cider vinegar
  • 1 tbsp. minced shallot
  • 1 tsp. finely chopped tarragon
  • 1 tsp. dijon mustard
  • 1 tsp. honey
  • 1/8 tsp. chili flakes
  • 1/4 tsp. sea salt
  • Freshly ground black pepper to taste
  • 1/2 cup olive oil

+ 1 pomegranate, seeds removed & reserved for garnish

How to:

1. Peel and slice your kohlrabi and apple {leave the skin on the apples if you'd like} into matchsticks and add to a large bowl. Toss with lemon juice to avoid oxidation.

2. Add all vinaigrette ingredients into a mason jar with a lid. Shake it up!

3. Toss the kohlrabi and apple with enough vinaigrette to generously coat. Refrigerate for at least 30 minutes before serving to allow the salad to marinate.

4. Taste the salad and adjust seasoning if needed, adding more salt/pepper

5. Plate it up and add the pomegranate seeds right on top for a beautiful crunch.

It doesn't get any better than simple & satisfying.
