I Scream, You Scream, We All Scream for....

Ice Cream!!!!

When I think of ice cream I am automatically sent back in time to my neighborhood Baskin Robins. Chocolate chip cookie dough, butter pecan, strawberry cheesecake, and of course my personal favorite: cotton candy!

Damn! all of that refined sugar, heavy cream, and pink/blue food coloring. It could've been the death of me.

Luckily I've discovered the world of alternative ice cream. I mean coconut milk + something creamy (like banana or avocado) + sweetener + other accent flavors = a perfect vegan ice cream! Alternative things are cool now...right? People like to jump into the unknown...right? Well maybe. & if you want to kick the crappy ingredients to the curb and love your body a bit, then check out this video on how to make Vegan Avocado Lime Ice Cream! You will be sharing this recipe with your friends! (maybe...you also may just sit and eat it right out of the ice cream maker.)


3 Avocados

1/2 cup lime juice

1 tbsp. chia seeds

1 tsp. (or more/less depending on how you'd like it) of pure liquid stevia

2 cans organic coconut milk

How To

1. Juice your limes & then whisk the chia seeds and the juice together. Let sit for 10 minutes.

2. Quarter your avocados. To do this start by slicing them in half around the seed. Remove the seed and then slice each half down the middle. Remove the outer skin and you're good to go!

3. Blend everything together until you can't really see any chia seed floating around, and the overall texture is nice and creamy.

4. Put into an ice cream maker for 20 minutes, or until nicely frozen.

**an ice cream maker is essential for this to be a creamy vegan ice cream. Not using the ice cream maker will make it freeze very solid.
