Grilled Guacamole

Try this unique spin on classic guacamole.

  • 4 Avocados
  • 1/2 a beefsteak tomato
  • 1/2 a sweet onion
  • 1/2 a jalapeño
  • 2 cloves garlic
  • 1 lime
  • Salt to taste

How to

1. Preheat your grill to around 400-425° F (charcoal grill preferred, but gas will work as well)

2. Slice all of the avocados in half and remove the pit.

3. Slice the tomato in half and remove all seeds.

4. Slice the onion in half through the root and peel off skin.

5. Slice the jalapeño in half length-wise. (You can leave seeds in for an added kick.)

6. Peel the garlic and slice the lime in half.

7. Grill the avocados, tomato, onion, jalapeño, garlic and lime face down for 4-5 minutes. When finished they should be nicely charred.

8. Remove everything from the grill and transfer to a cutting board.

9. Scoop the flesh of the avocado away from the skin, roughly chop and add to a large bowl.

11. Dice the grilled tomato, onion, garlic & jalapeño. Add to the bowl and mix into the avocado with a spatula.

12. Squeeze the lime into the bowl and season well with salt. Mix up & serve.
