Summer Breakfast

Are you like me?

I always run out of breakfast ideas & fall into the same-ol-same-ol slum. :/

This summer I'm challenging myself to simplify & satisfy. This breakfast is exactly what I want before stepping out that door in the morning. {coffee not pictured}

Today I used a piece of grain-free baguette, mashed avocado, leftover tomato salad, a farm-fresh fried egg & chopped arugula.

How to:

  • Toast a piece of baguette
  • Mash 1/4 of an avocado with a squirt of lemon juice & a pinch of salt
  • The tomatoes were tossed with olive oil, salt & pepper the night before but can be done the day of. (I've been addicted to tomatoes this summer. See our previous post)
  • Fry the egg over medium heat in a bit of olive oil or ghee. When the whites are completely opaque, remove from the heat and add to plate. The egg will always carry-over cook a bit once removed from the pan.
  • Top everything with peppery chopped arugula.

BOOM. Breakfast never tasted (or looked) so good!
