Roasted Early Girl Tomatoes

These small, sweet & oh-so-addictive tomatoes come in late summer & should be consumed in large amounts.

When roasted whole like this, you can really enjoy the flavors of something so simple...yet so special.

+ tomatoes are pretty darn good for you.

Ingredients

  • Early Girl tomatoes
  • 2 tbsp. melted ghee (or olive oil)
  • Salt & pepper to taste

*you can add whole garlic cloves, shallots, onions, etc to roast with the tomatoes

How to:

  • Preheat oven to 350°
  • Rinse your tomatoes & pat dry.
  • Add them to a bowl and toss with the melted ghee, salt & pepper. {I'm always a bit heavy hand with salt and pepper when roasting whole vegetables}
  • Add to a baking sheet and roast for 45 minutes
  • Remove from the oven & allow to rest for 5-10 minutes before serving. {biting into a tomato straight from the oven can burn the crap out of your mouth....just saying}

I love to serve these as a side to a main dish...or use it in place of a poached egg on pasta dishes, brunch dishes... the options are endless & delicious.
