Pumpkin Spice Granola

This recipe is #grainfree & #delicious

Ingredients

  • 1/2 C organic pumpkin puree
  • 1/3 C coconut oil
  • 1/3 C local organic honey
  • 1/4 t almond extract
  • 2 T ground cinnamon
  • 1 t ground ginger
  • pinch of Himalayan pink salt
  • 8 organic dried apricots
  • 1 1/2 C sunflower seeds
  • 1/2 C pumpkin seeds
  • 1/2 cup shredded coconut

How To

  • Preheat oven to 325 degrees
  • Mix the pumpkin puree, coconut oil, honey, almond extract, cinnamon, ginger & salt together in a large bowl.
  • Roughly chop your dried apricots & add them into the wet ingredients along with the sunflower seeds, pumpkin seeds & shredded coconut. Mix well.
  • Place some parchment on a large baking sheet. Add the granola mixture & spread out evenly.
  • Bake for 30-40 minutes, moving the granola around every once in a while to make sure it doesn't burn.
  • Let it cool before eating.

Put this granola on top of coconut yogurt with fresh apples for a dynamite breakfast
