Kale Creamsicle Salad

  • Juice 2 oranges + 1 lemon
  • Add to minced shallot, let sit for 10 minutes
  • Add cudo and slowly whisk in cream
  • Season cream vinaigrette with salt and set aside
  • Clean and de-stem kale
  • Cut off orange rind and segment 2 oranges
  • Shave fennel and toss with shaved parmesan and torn basil leaf
  • Mix cream vinaigrette with kale and oranges
  • Crack pepper on top

Ingredients:

  • 4 oranges
  • 1 shallot
  • 1 lemon
  • 1c cream
  • 1c cudo
  • 1 bunch kale
  • 1 fennel
  • 1 basil leaf
  • fresh parmesan
  • black pepper
  • sea salt
